Corbières
A bright ruby-red colour. The nose reveals enticing aromas of cherry and raspberry, followed by notes of black pepper and cinnamon. Hints of mint and green tea add further complexity to the aromatic profile. On the palate, the attack is fresh and elegant, with flavours of sour cherry, quince, bay leaf and tobacco, leading to a delicate cinnamon finish. The tannins are refined, subtle and fresh, providing a delicate and sophisticated structure. Best enjoyed young, though it will continue to develop beautifully with age.

Vinification
Syrah and Grenache were harvested on the same date, 21 September, and co-fermented in the same tank. Gentle pump-overs were carried out daily during the first week of fermentation, followed by light cap wetting throughout a 20-day maceration. After racking, malolactic fermentation proceeded smoothly.
Ageing
100% aged in concrete tanks for 6 months.
